Beet and Apple Salad

Ingredients
- 2 medium-sized beets, cooked and peeled
- 1 apple, cored and diced
- 1/4 cup chopped walnuts or almonds
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons chopped fresh parsley or mint
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Cook the beets: You can boil, steam or roast the beets until they are tender. Once cooked, let them cool slightly, then peel and dice them into bite-sized pieces.
- In a large bowl, combine the diced beets, diced apple, chopped nuts, crumbled feta cheese (if using) and chopped fresh parsley or mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, salt and pepper to make the dressing.
- Pour the dressing over the beet and apple mixture, and toss gently to coat everything evenly.
- Taste and adjust seasoning if needed.
- Serve the beet and apple salad immediately, or refrigerate for a couple of hours to allow the flavors to meld together.
