Beet and Apple Salad

Ingredients

Yields 4 Servings
  • 2 medium-sized beets, cooked and peeled
  • 1 apple, cored and diced
  • 1/4 cup chopped walnuts or almonds
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons chopped fresh parsley or mint
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Cook the beets: You can boil, steam or roast the beets until they are tender. Once cooked, let them cool slightly, then peel and dice them into bite-sized pieces.
  2. In a large bowl, combine the diced beets, diced apple, chopped nuts, crumbled feta cheese (if using) and chopped fresh parsley or mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey or maple syrup, salt and pepper to make the dressing.
  4. Pour the dressing over the beet and apple mixture, and toss gently to coat everything evenly.
  5. Taste and adjust seasoning if needed.
  6. Serve the beet and apple salad immediately, or refrigerate for a couple of hours to allow the flavors to meld together.
  7. Enjoy this colorful and nutritious salad as a side dish or light meal.
