Kid-Friendly Broccoli Salad

This broccoli salad is not only packed with vitamins, minerals and fiber from the broccoli but also has a hint of sweetness from the cranberries or raisins, making it a perfect balance of flavors for kids.

Ingredients

Yields 4 servings
  • 4 cups broccoli florets, chopped into bite-sized pieces
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup chopped walnuts or almonds (optional)
  • 1/4 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the broccoli florets, shredded cheddar cheese, dried cranberries or raisins and chopped nuts (if using).
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, honey or maple syrup, apple cider vinegar, salt and pepper to make the dressing.
  3. Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
  4. Taste and adjust seasoning if needed.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, give the salad a final toss and sprinkle with additional nuts or cheese if desired.
  7. Serve this delicious and healthy broccoli salad as a side dish or light meal.
