Kid-Friendly Broccoli Salad
This broccoli salad is not only packed with vitamins, minerals and fiber from the broccoli but also has a hint of sweetness from the cranberries or raisins, making it a perfect balance of flavors for kids.
Ingredients
- 4 cups broccoli florets, chopped into bite-sized pieces
- 1/2 cup shredded cheddar cheese
- 1/4 cup dried cranberries or raisins
- 1/4 cup chopped walnuts or almonds (optional)
- 1/4 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the broccoli florets, shredded cheddar cheese, dried cranberries or raisins and chopped nuts (if using).
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, honey or maple syrup, apple cider vinegar, salt and pepper to make the dressing.
- Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
- Taste and adjust seasoning if needed.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Before serving, give the salad a final toss and sprinkle with additional nuts or cheese if desired.
