Pickle and Turkey Pinwheels

Ingredients

  • 4 large whole wheat or spinach tortillas (or tortillas of choice)
  • 1/2 cup hummus (store-bought or homemade)
  • 1/2 cup thinly sliced pickles (use your favorite type)
  • 1/2 cup thinly sliced deli turkey
  • 1/4 cup shredded carrots
  • 1/4 cup baby spinach leaves

Instructions

  1. Spread a thin layer of hummus evenly over each tortilla.
  2. Layer the thinly sliced pickles, deli turkey, shredded carrots and baby spinach leaves evenly over the hummus on each tortilla.
  3. Starting from one edge, tightly roll up each tortilla into a cylinder shape.
  4. Using a sharp knife, slice each rolled-up tortilla into bite-sized pinwheels.
  5. Arrange the pickle and turkey pinwheels on a serving platter and secure each pinwheel with a toothpick.
