Cheesy Spinach Casserole
This healthy cheesy spinach casserole is creamy, flavorful and packed with nutrients. It's a great way to sneak in some greens while enjoying a delicious dish.

- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 cups fresh spinach leaves, washed and chopped
- 1 cup low-fat cottage cheese
- 1/2 cup plain Greek yogurt
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- Optional: pinch of nutmeg for extra flavor
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. If using nutmeg, add a pinch now for extra flavor. Remove from heat and set aside.
- In a mixing bowl, combine cottage cheese, Greek yogurt, grated Parmesan cheese and shredded mozzarella cheese. Mix until well combined.
- Add the cooked spinach mixture to the cheese mixture and stir until evenly distributed.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
