Cheesy Spinach Casserole

This healthy cheesy spinach casserole is creamy, flavorful and packed with nutrients. It's a great way to sneak in some greens while enjoying a delicious dish.

Ingredients

Yield 6 Servings 

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 cups fresh spinach leaves, washed and chopped
  • 1 cup low-fat cottage cheese
  • 1/2 cup plain Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Optional: pinch of nutmeg for extra flavor

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. If using nutmeg, add a pinch now for extra flavor. Remove from heat and set aside.
  4. In a mixing bowl, combine cottage cheese, Greek yogurt, grated Parmesan cheese and shredded mozzarella cheese. Mix until well combined.
  5. Add the cooked spinach mixture to the cheese mixture and stir until evenly distributed.
  6. Transfer the mixture to a greased baking dish.
  7. Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
