Honey-Glazed Peas

Ingredients

  • 2 cups fresh or frozen peas
  • ½ cup sliced Vidalia onion
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: chopped fresh mint for garnish

Instructions

  1. If using fresh peas, blanch them in boiling water for 1-2 minutes, then drain and set aside. If using frozen peas, thaw them according to package instructions.
  2. In a skillet or saucepan, put on medium heat and add olive oil.
  3. Add the onions and lightly saute them until they are just cooked through but not brown.
  4. Add the peas to the skillet and sauté for 2-3 minutes until they start to become tender.
  5. Drizzle the honey over the peas and stir to coat evenly.
  6. Add the lemon juice to the skillet and continue to cook for another 1-2 minutes, stirring occasionally, until the peas are cooked through and glazed with the honey mixture.
  7. Season with salt and pepper to taste and add the butter to coat the peas.
  8. Optional: Garnish with chopped fresh mint for added flavor and freshness.
