Honey-Glazed Peas

- 2 cups fresh or frozen peas
- ½ cup sliced Vidalia onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Optional: chopped fresh mint for garnish
Instructions
- If using fresh peas, blanch them in boiling water for 1-2 minutes, then drain and set aside. If using frozen peas, thaw them according to package instructions.
- In a skillet or saucepan, put on medium heat and add olive oil.
- Add the onions and lightly saute them until they are just cooked through but not brown.
- Add the peas to the skillet and sauté for 2-3 minutes until they start to become tender.
- Drizzle the honey over the peas and stir to coat evenly.
- Add the lemon juice to the skillet and continue to cook for another 1-2 minutes, stirring occasionally, until the peas are cooked through and glazed with the honey mixture.
- Season with salt and pepper to taste and add the butter to coat the peas.
