Roasted Squash Wedges

These roasted squash wedges are simple to make and bursting with flavor. They make a delicious and nutritious side dish or snack for kids.

Roasted Squash Wedges

Ingredients

Yield 4 Servings
  • 2 medium-sized yellow squash
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the squash and cut off the ends. Cut the squash into wedges, about 1/2 inch thick.
  3. In a large bowl, toss the squash wedges with olive oil until evenly coated.
  4. Sprinkle garlic powder, paprika, salt and pepper over the squash wedges, and toss again to coat evenly.
  5. Arrange the seasoned squash wedges in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 20–25 minutes, or until the squash is tender and lightly golden, flipping halfway through.
  7. Remove from the oven and let cool for a few minutes before serving.
