Roasted Squash Wedges
These roasted squash wedges are simple to make and bursting with flavor. They make a delicious and nutritious side dish or snack for kids.

- 2 medium-sized yellow squash
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash the squash and cut off the ends. Cut the squash into wedges, about 1/2 inch thick.
- In a large bowl, toss the squash wedges with olive oil until evenly coated.
- Sprinkle garlic powder, paprika, salt and pepper over the squash wedges, and toss again to coat evenly.
- Arrange the seasoned squash wedges in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20–25 minutes, or until the squash is tender and lightly golden, flipping halfway through.
- Remove from the oven and let cool for a few minutes before serving.
